Day eleven - corn fritters and spicy tomato chutney.

Recipe for quick spicy tomato chutney adapted from here
Tomato chutney
1 x 400g tin chopped tomatoes
1 onion, finely chopped (or in chunks as I did)
1 clove garlic, crushed
1/4 cup balsamic vinegar
2 tablespoons brown sugar
2 tablespoons sweet chilli sauce (or any chilli sauce you can find)
Combine all ingredients in a saucepan, simmer for 30 minutes, stirring occasionally.
I substituted red onion for brown and red wine vinegar for balsamic.
There are plenty of recipes for chutney out there, this one was quick and easy and only required half an hour to prepare and thus was ready in time to eat with corn fritters still nice and warm :)

Very easy dish to make, I halved the recipe as I didn't need 18 fritters.. I would've had far too many leftovers.
There's no denying it was delicious... however not as amazing as I would have liked. The chutney was great - subtle spicy flavour and chunks of onion - the way I like it! The fritters really are a savoury pancake with corn and chives added in... so if you aren't a big fan of savoury pancakes perhaps this isn't for you, otherwise I still recommend trying this recipe out if you have the time.
